Santo Remedio: cocktails that want to heal you in more ways than you imagine.

Our next Pont de Valencia event is at Santo Remedio — and once you hear what goes into a drink there, you’ll understand why we picked it.

The bar is run by Aida and Nico, two bartenders with years of serious experience behind the stick. Their foundation is classical cocktail-making — but that’s just the starting point. “We take classic recipes that already exist and apply modern techniques to give them a twist,” says Aida. The result is a menu that feels both familiar and genuinely surprising.

That menu is called Flores que curan — and it does exactly what it says. Every cocktail is built around a healing flower, chosen for its medicinal properties. The Calenda has calendula. The Carmesí, hibiscus. The whole thing is a nod to the bar’s name: Santo Remedio. The holy remedy. “We use botanicals, roots, spices that have traditionally been used for their healing properties,” Aida explains. “And we wanted to honour that with the name.”

They’re also the kind of people who geek out on the details — why this rum and not that one, why this gin over another. “We’re always looking for information so we can apply new things to the bar,” says Aida. Carbonation techniques, clarification, self-taught experimentation — it’s all part of how they work. They stay sharp through training, through the brands they work with, and through a tight-knit community of Valencia bartenders that includes some of the city’s most respected cocktail bars.

Sweet, citrusy, light, or dangerously good — the menu has something for everyone. “We try to make sure there’s variety: sweet cocktails, light ones, citrusy ones, and some that are quite bold and powerful,” says Aida. “So it adapts to everyone’s taste.”
